Spicy Chipotle Egg Salad
So lately I've been trying to eat a little better. I've been trying to plan out all of my meals so that way I have healthy choices available when I'm really hungry instead of grabbing for candy.
Each Sunday night I was making overnight oats for my weekday breakfasts with Greek yogurt, peanut butter, and chia seeds. While it has been really great to have a grab and go breakfast with a lot of protein, it can get a little boring. You know you've had too many chia seeds too many days in a row when EGG SALAD sounds AMAZING. HA!
The truth is I had planned on making a custard for a baking order that was cancelled and I had a lot of eggs that I needed to use before they went bad, so egg salad did the trick! I decided to add a little kick to this recipe and put in some jalapenos and chipotle peppers! This was a great change of pace for breakfast served on a toasted English Muffin!
Ingredients:
10 hard boiled eggs peeled
1/2 cup mayo
1 tablespoon Dijon mustard
2 tablespoon finely chopped pickled jalapenos
2 tablespoon chopped scallions
2 tablespoon chopped chipotle pepper and adobo sauce
salt and pepper to taste
Directions:
1. Boil Eggs - Place Eggs in sauce pan and cover with cold water. Bring to a boil. Cover and Remove from heat for 8-10 minutes. Remove from pan and place in cold water to cool.
2. peel eggs and chop into large chunks.
3. Add the rest of the ingredients and stir until creamy.
