Chipotle Deviled Eggs
I made these Chipotle Deviled Eggs as part of the breakfast charcuterie board that I made for my friend's baby shower a few weeks ago. They were a really big hit! It always surprises me how popular deviled eggs are at gatherings!
I liked the subtle smokey flavor the adobo sauce added to these eggs! Enjoy!
Ingredients:
12 eggs
1/3 cup mayonnaise
1 green onion finely chopped
1 tsp yellow mustard
1 tbsp. chipotle in adobo sauce
pinch of salt
pinch of chili powder
Directions:
1. Place eggs in a single layer in a saucepan and cover with 2 inches of water. Bring to a boil. Allow to boil for 7-8 minutes depending on your texture preference. Remove eggs from saucepan and place in bowl with ice bath.
2. Crack the shells and peel eggs. Slice in half lengthwise and remove yolks into a small bowl.
3. Mash the yolks, then stir in remaining ingredients.
4. You can spoon mixture into the egg whites, or use a piping bag.
