When I was born we lived in a trailer park called Cadillac Estates that is mostly burned down now.  Today I am a vegetarian living in Los Angeles learning how to love vegetables.

Brown Sugar Brownies

Brown Sugar Brownies - Blondies


Well, since I posted my friend Laura's noodles last week, I thought I might stay on a theme here and post her Brown Sugar Brownie recipe this week.


Laura and I lived together in a basement apartment in the Logan Square neighborhood of Chicago just before it became an actual nice neighborhood to live. It took us a while to get actual furniture so for the longest time we had random set pieces from the theater shows I was help putting up at The Center On Halsted. Our favorite piece was the Avocado green doctor's exam table. We felt that it worked in either the living room or the kitchen, so it was a nice feature that it was already on wheels.


We had the best time in that little apartment. Laura was then dating her now chef husband and I had some of the best meals learning to cook with them. I was living with Laura when I decided to go to Pastry School. I will always be grateful for our time together. When we weren't having deep-fried Mondays, yes it is exactly how it sounds, we had an entire dinner made of deep fried anything, we would sometimes bake a batch of these Brown Sugar Brownies. They are rich and sweet and really check off all the craving boxes and somehow we always had all the ingredients on-hand to whip up a batch in a hurry.


Again, this is a recipe from Laura, so don't stink it up:


Ingredients:

2 2/3 cup all purpose flour

2 tsp baking powder

1 tsp salt

1 cup soft butter

2 cup light brown sugar, firm pack

2 eggs

2 tsp vanilla extract

11.5 oz semi sweet chocolate chunks


Directions:

1. Preheat Oven to 350 degrees F and line 9 x 13 baking pan with parchment paper.


2. Sift flour, baking powder, salt together.


3. In another bowl with a wooden spoon stir butter, sugar, eggs, and vanilla until smooth.


4. Stir in flour mixture until well blended. Spread evenly in pan.


5. Bake 25-30 minutes or until the surface looks golden (make sure to undercook slightly)
